I made this sweet potato pizza last Friday and I was very excited to share it with you. If you are gluten intolerant, then make this gluten free pizza. It’s delicious, and easy to make at home. The ingredients are whole and healthy.
All you need is boiled sweet potatoes, veggies, tomato sauce, seasoning and some chickpea flour for binding.
INGREDIENTS
2 cups mashed sweet potatoes
1/2 cup chickpeas flour
1 tbsp potato starch
1/2 garlic powder
1/2 tsp turmeric powder
1/2 tsp of Salt
1tbsp Chia seeds plus 3 tbsp water
For the Pizza Sauce
1/2 cup of tomato paste
1 tbsp olive oil
Salt to taste.
For the topping
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
1 small onions
Slice mushrooms (optional)
1 tbsp olive oil
1 tsp of cumin powder
1 tsp of fennel seeds
Salt to taste
PREPARATION
- Combine 1tbsp of Chia seeds with 3 tbsp of water in a small bowl and set aside.
- In a large mixing bowl add mashed sweet potatoes, chickpeas flour, potato starch(optional), garlic powder and Chia seeds mixture. Mix well until well combined.
- In an oiled baking sheet or pizza pan, place the sweet potato mixture dough and shape into one large pizza
crust. - Place in the oven and bake the Pizza crust for 20 minutes.
- While the Pizza crush is baking, combine the Pizza topping in a small bowl, season with salt, cumin powder and fennel seeds. Add 1tbsp olive oil and mix well.
- In a small pan, add tomato paste, olive oil and salt, cook for 3 minutes. And let it cool.
- Take out of and brush the Pizza crust with Olive oil, spread tomato sauce and sprinkle with onion, green , red and yellow peppers, mushrooms (optional) then bake again for about 15 to 20 minites.
Take out from the oven, let it cool for some minutes then slice and serve.
