RICE AND SCRAMBLED TOFU BREAKFAST BOWL

This is a delicious breakfast bowl that will satisfy your day and feel you all nutrients your body needs. It’s quick and easy to make.
Especially if you have cooked your beans and brown rice ahead of time.
I used leftover rice. As for my beans, i usually boil beans and keep in the freezer to use when needed. This helps me reduce cooking time.

INGREDIENTS

1 block of firm tofu, scrambled
1 cup of red beans, boiled
1 cup of cooked brown rice
1/4 tsp of turmeric
1/3 tsp of salt
1/2 of onion powder
1/2 of garlic powder
1 tbsp of cooking oil
3 to 5 tbsp of water

PREPARATION METHODS

On a pan over medium heat, add oil, (do not heat oil), scrambled tofu, boiled red beans, water and cook stirring frequently for 5 minutes. Add the remaining ingredients and keep stirring for 3 more minutes.

Remove from the heat and serve with cooked brown rice, avocado, fenugreek sprouts and garnish with some seeds.

Note: you can serve this with a brown bread, and any green salad also.
You can also use any kind of beans.
