HOMEMADE BAKED TOFU

INGREDIENTS

1 block of firm or extra firm tofu, drained and pressed.
1 tablespoon of fresh squeezed lemon juice
1/2 cup water.
1 tsp of paprika
1 tbsp of cumin powder
1/2 cup of breadcrumbs
1 tbsp of coriander powder
1 tbsp olive oil
1 tbsp of of beetroot paste, blend or grate, optional 
1/2 of salt

PREPARATION

  1. Cut tofu into stripes.
  2. Combine the remaining of ingredients in a small bowl and whisk together. Arrange the Tofu slices in a single layer, in a plate and pour enough marinade over them to cover. Let stand for an hour or two. The longer the better.
  3. Remove the Tofu slices from marinade and coat each slice with the breadcrumbs and place in a baking sheet. Spread the top with olive oil.
  4. Bake for 20 minutes, then turn the stripes and bake for 10 minutes or or until the Tofu is firm and starting to turn light brown.
  5. Remove from oven, let cool and serve.
