Health on a Plate

STEWED SOYA CHUNKS

INGREDIENTS 

 1 cup of soya chunks 

1 cup white beans, boiled 

1 tbsp of oil 

1 large carrot, chopped 

1 small green pepper, chopped 

1 large onion 

1 handful of spring onion 

1/2 tsp of fennel seeds 

1/2 tsp of cumin seeds 

1/2 tsp of coriander powder 

1/2 tsp of garlic powder 

2 fresh tomatoes 

Thyme 

Salt 

Half a tsp of Turmeric and paprika

PREPARATION

1 cup of water, you can use the same water you use to soak the soya chunks

Boil about 3 cups of water in a pot, add soya chunks and a little salt. Switch off the stove, close the pot with a lid and keep it aside for 15 minutes.

Once the soya chunks has cooled, gently squeeze out the water from the soya chunks. Set them aside.

In a pan over medium heat, add oil ( do not heat oil) add carrot, onion, and fresh tomatoes. Cook stirring occasionally until the tomatoes are tender. 

Add green pepper, soya chunks, white beans, and the rest of the spices expect spring onions. 

Mix everything together well and cook for 10 to 15 minutes. Then add the spring onions, mix and remove from the heat. Serve with brown rice or anything your heart desires.
