Easy Homemade Seitan

Vital wheat gluten is not technically flour itself, but it’s made from wheat flour.
It is a protein in wheat.

It’s simply made by mixing flour with a small quantity of water in order to get a very hard dough. The dough is then washed until all the starch granules has been removed leaving a sticky, insoluble and elastic gluten mass.
It’s then dried and ground into powder.

The texture of the Seitan reminds that of meat, but as it is a vegetable product, it doesn’t contain any cholesterol or saturated fat, and it has none of the disadvantages of meat.

It is very simple to make Seitan using vital wheat gluten, and this is the simplest recipe to help make your Seitan at home.

Ingredients

Homemade Seintan

1 cup of vital wheat gluten flour
1 tsp of paprika
1 tsp of garlic powder
1/2 tsp of salt
1 tsp of fennel seeds
1 of water
1 tsp of crushed coriander
1 tsp of cumin seeds

Broth
6 cups of water
2 medium onions, roughly chopped
2 bay leaves
Fresh rosemarrosemary leaves

Preparation

Combine the gluten flour with all the dry ingredients first in a bowl.
Gradually add water to form a stiff dough, stirring with a spoon first then your hands. Drizzle some more water if needed. Knead for 2 to 3 minutes, the dough is not going to be completely smooth but that’s okay.

Let the dough rest for some 10 to 15 minutes covered with a clean towel.

Meanwhile fill a soup pot with all the 6 cups of water. Add the onions, bay leaves and rosemary and start heating.

Once the dough has rested, gently drop the dough in the pot, and summer for 30 to 45 minutes. You can also cut it unto small pieces. It will take less minutes when cooking.

You can you make your Seitan in many different dishes, stews, skewers, baked, etc..

Keep the Seitan in the broth in the fridge.

Can be refrigerated for up to a week.

Can be frozen up to 3 months or more.
