Ingredients.
1 medium fresh corn, boiled and sliced
200g of Irish potatoes, roughly chopped and half way boiled
1 cup of cherry tomatoes, optional
1 tsp of cumin seeds
1 tsp fennel seeds
1 tsp black seeds
1/2 tsp of paprika
1/4 tsp of turmeric powder
1 tablespoon of olive oil
Salt to taste
Preparation
Combine boiled sliced corn, potatoes and the rest of the ingredients on a mixing bowl.
Brush the baking sheet with little oil, spread the potatoes and corn evenly.
Place in oven and bake at 180 degrees for 25 minutes stirring occasionally to make sure the seeds don’t burn.
Remove from oven and serve.
