INGREDIENTS
1 cup red kidney beans (soaked in water)
1 large red onion, sliced
1 table spoon tomato paste
3 medium fresh tomatoes, sliced
2 table spoons oil
1 tsp paprika
1/2 cumin powder
1 tsp coriander seeds
Chopped celery leaves.
Salt to taste.
METHODS
- Cook red kidney beans with (4 cups of water) till they are soft and melt in your mouth, set aside.
- In a pan over medium flame add oil followed by red onion, tomato paste and fresh tomatoes, cook for 2 to 3 minutes stirring occasionally.
- Then add paprika, coriander seeds, cumin powder and salt for taste, stir and let cook for 2 minutes.
- Add the cooked red kidney beans to the mixture and stir well. Allow the beans to cook and blend with mixture in low flame for about 10 minutes.
- Then add chopped celery and stir again, put of the flame.
- Allow the beans to cool down and serve with rice. Bonne Appetit.
