This eggplant sandwich is very delicious and easy. My son’s favourite. My kids don’t like eggplant, but when I bake it, oooh how they enjoy it. I don’t know about yours.


2 small eggplants, sliced and baked, if your eggplants are large you can use one.

Sauted green, red, yellow pepper, you can use fresh ones. You can also use tomatoes or onion.

Some slices of cucumber
1 tsp of eggless mayonnaise, I used my homemade cashew nut mayonnaise
1/2 of an avocado, you may need less or more
Fenugreek sprouts, optional
2 slices of brown bread, toasted


  1. Wash the eggplants, slice them and sprinkle with salt, paprika, dry parsley and oil. Place the eggplant in a baking sheet and bake for 10 to 15 minutes or until golden brown.
  2. Spread the avocado on one side and eggless mayonnaise on the other side, feel the slice with baked eggplant, cucumber, sauted bell peppers and sprouts (you can add more baked eggplant if you desire).
  3. Now you can enjoy your eggplant sandwich, how easy was that? bonne appetite.
