Health on a Plate


This vegan meatballs are really delicious and easy to make. I hope you will like them as much as I have. They have so much flavor and nice tender taste.


1 cup of boiled chickpeas

½ cup soy mince, soaked

1 large onion,  diced

1 medium green bell pepper, finely chopped

1 medium red bell pepper, finely chopped

½ tsp salt

1 tbsp chia seeds plus 6 tbsp water

Chia Seeds mixture

1 tsp cumin powder

1 tsp paprika

1 fennel seeds

½ cup chopped spring onion

2 tbsp chickpea flour

½ cup breadcrumbs


Preheat oven to 400 ° C. Combine the chia with the water and set aside.

In a large sized bowl, add the boiled chickpeas, soya mince, onion, salt, chia mixture, fennel seeds paprika, cumin powder, green and red bell peppers and spring onion.

Mash everything together using a potato masher until well combined. If you don’t have a potato masher, then you will have to mash your chickpeas with a fork in a separate plate before mixing everything together.

Add the breadcrumbs and chickpea flour, and mix again.

Form into balls and place on a greased pan. Bake for about 30 minutes (flipping mid way through).

Meanwhile  prepare any whole wheat  pasta you want to serve with your meatballs, as well as your tomato sauce.

Note. *Meatballs soften quickly once in the sauce, so they’re best eaten right away.

To serve, top cooked pasta with meatballs and pour over tomato sauce.
