If you’re among people who believes brown rice is healthy but you don’t enjoy it’s taste, here’s another simple recipe of brown rice and red beans salad. Enjoy
1 and half of cup of cooked brown rice
1 carrots, sliced
1 small red onion, sliced
1 large fresh tomato
1 tbsp of olive oil
1/2 cup of boiled red beans
Handful of basic leaves, you can use any green leaves.
2 tablespoon spoons of homemade peanut butter salad dressing.
PEANUT BUTTER DRESSING
How to make peanut butter dressing:
1 tablespoon of unsweetened peanut butter 3 tablespoons of water, 1 tsp of lemon juice, 1 glove of garlic (grated) pinch of salt. In a small mixing bowl, mix everything together and put aside.
In a salad bowl, add cooked brown rice, red beans, onion, oil, salad dressing and the rest of the ingredients. Mix well and serve.
