Easy Brown Rice Salad

Many people who are convinced brown rice is healthier than white rice don’t really enjoy eating it because of it’s taste. If you’re one of them I want you first to know that when it’s comes to healthy food sometimes we have to eat with understanding. It shouldn’t be about it’s taste but nutritional values, we should think about how much will the food we are about to eat will contribute to our bdies. You can’t continue to eat what you know it’s not good for your health. You have to try and cook what is healthy in a way you can enjoy. Because of this i have decided to create some simple and delicious brown rice recipes, to help you eat it without complaining about it.


This easy and delicious brown rice salad recipe is just what you need to start with. It’s very simple to make all you need is just for boiled brown rice, you can even use leftover brown rice for this recipe. It’s filled with vitamins, protein and starch, can be served as a side dish or enjoy as it is.

INGREDIENTS
1 and half cup cooked brown rice
1/3 cup of roasted chickpeas, you can use boiled ones.
1 medium fresh tomatoes, diced
1 small red pepper, diced
1/2 cup of cucumber, diced
1 small red onion, diced
1 tbsp of lemon juice
1 tablespoon of olive oil
Salt to taste
Any seeds or nuts of your choice
Any vegan meat substitutes of your choice. I used chunks stripes which is my meat substitute product that I sell. You can use tofu, Seitan, sausages, etc.

PREPARATION

In a mixing bowl, add brown rice, and the rest of the ingredients, except chunks stripes if you’re using it.
Mix everything well, serve and top with your meat substitute or your nuts and seeds. Enjoy.
