This simple and delicious recipe has been our family favourite, my husband and kids loves it a lot. It’s very simple to make, taste delicious and it’s healthy. I know you will enjoy it.
INGREDIENTS
2 cups of cooked whole wheat pasta
2 cup of broccoli florets
1 cup of mushrooms , sliced
1 large onion, chopped
1 tbsp of oil
Red bell pepper, diced
1 large fresh tomato , diced
1/2 tsp of onion powder
1/3 of coriander powder
1/3 tsp of salt
PREPARATION
- Place a steam basket or colander into a large saucepan.
- Add broccoli and enough water to cover the bottom of the saucepan.
- Bring to a boil, cover and cook 5-7 minutes or until broccoli is tender-crisp when pierced with a fork. Remove from the colander or steam basket and place aside.
Sauté the mushrooms on a pan for about 3 minutes. You don’t need to add oil, as you keep stirring the mushrooms will start to realise it’s water and that will help it not to stick. Once it’s done remove from the pot and put on the same place with broccoli.
Now in a pan add oil, (do not heat oil) add onion, tomato and bell pepper. Let it cook until tomatoes start to realise it’s juice. Then add salt, garlic powder and ground coriander powder. Still well.
Add pasta and mushrooms, and broccoli. Keep stirring until everything is well mixed. Remove from heat and serve
You can enjoy it has it is or you can serve it with bread. I served mine with my homemade brown bread. You can also serve it as side dish.
