Enjoy this simple and delicious white beans stew.
INGREDIENTS
1 and half cup of white beans, boiled
1 large onion, chopped
1 large carrot, sliced
2 medium tomatoes, chopped
1 tsp of tomato paste
1 tsp of paprika
1 tsp of ground coriander
1 tsp of garlic powder, you can use garlic paste
1 tablespoon of olive oil
Salt to taste
Spring onion, or celery stalk
2 cups of water ( you can use the water remaining after boiling beans)
PREPARATION
In a saucepan, add oil (do not heat oil), onion, fresh tomatoes, carrot, and tomato paste. Cook for 2 to 3 minutes or until tomatoes start to release their juice.
Add the rest of the ingredients except spring onion. Cover and summer for 5 to 10 minutes or until the sauce thickens then add the spring onion or celery, mix well.
Remove from heat and serve over brown rice or with any cereal your heart desires.

I started already the journey of being a complete Vegetarian, I made my decision to cutting slowly eating meat by replacing some food especially from plant’s, perhaps am struggling to meet my needs due to the trial and tribulations of covid-19.I got Ellen G white history book where by She spokes much more of goodness of being a vegetarian.meeting with your post on this platform makes me to look forward and not turning back to my old food’s.once more I thank you for the great work, hope I will learn more from you.stay blessed in Lord Name Amen š
