VEGAN LENTIL MEATLOAF

This Vegan Meatloaf is very cheap, the ingredients are simple and can be find everywhere.  I always love coming up with simple,  easy, healthy delicious recipes for every home. I hope you enjoy.

INGREDIENTS

INGREDIENTS

5 cups boiled brown lentils, or less
1/2 cup oatmeal flour
1/2 cup bread crumbs
2 medium chopped onion

3 medium boiled potatoes,  mashed

5 cloves of Garlic chopped

Handful of parsley, chopped

2 Carrots, grated

1/2 cup of almonds, chopped
1 tsp dried thyme leaves
1 tbsp cumin powder
1 tbsp coriander powder
1/2 tsp salt to taste

FOR THE TOPPING

1/4 cup tomato paste
1 tbsp lemon juice
Pinch of garlic powder
Pinch of ginger powder
salt to taste

METHOD

  1. In a saucepan, sauté, onion, garlic and carrots for 2 minutes. Then add mashed potatoes mix and let cook for 2 more minutes.
  2. In a large mixing bowl, add 5 cups of lentils, add the mixture of onion, potatoes, carrots and garlic. Add cumin powder, coriander powder, thyme, paprika and salt to taste.
  3. Mix everything together using a potatoes masher or a fork, or even your hands.
  4. Gently press lentil mixture into two oiled loaf pan. And bake the loafs for 20 to 25 minutes at 220 degrees.
  5. In a small bowl stir tomato paste,lemon juice, garlic powder, ginger and salt. Set aside.
    1. After 25 minutes, take out the loafs from oven and spread with tomato mixture. Bake for another 10 minutes until the top of the loafs are dry and firm.
  6. Let cool in for about 15 minutes. Run a sharp knife around the edges of the pan then turn out onto a serving platter. 
    1. Allow to cool slightly before slicing and Serving, as this will help the lentil loafs to firm up. Add more tomato sauce on top before serving if you wish. Enjoy
