Tofu Scramble and Avocado Toast

 

This tofu scramble and avocado toast is so easy and very tasty. It takes you just few minutes to make this. So this is a must try recipe. Enjoy

Ingredients

2 blocks of soft tofu, you can use firm or extra firm
1 tbsp of nutritional yeast, optional
1 tbsp of oil
2 cloves of garlic, minced
1 small fresh tomato, cut into chunks
1 ripe avocado, mashed
4 slices of whole wheat bread
1 small onion diced
3 small bell peppers, red yellow and green, cubed
1/2 a tsp of salt
1/3 tsp of turmeric powder
1/3 of paprika
1/4 cumin powder

Preparation Methods

Using a fork crumble the tofu to resemble scrambled eggs and set aside.
Add a tablespoon of oil to a frying pan, (do not heat the oil) add, bell peppers, onion and tomato. Cook for 2 to 3 minutes. Add tofu and the rest of the ingredients, toss gently. Let it cook for another 2 to 3 minutes. Remove from the fire and set aside.

Remember, you don’t have to cook this recipe for long. In just few minutes you are done.

Place a bread into a toaster and while you wait, mash up the avocado add a pinch of salt and cumin powder. Divide the avocado in 4 slices of bread, spreading evenly. Top with tofu scramble and enjoy.
