SPIRAL POTATOES. (chips on the sticks)

This is a fun and interesting recipe, ships on the stick, or potato skewers, or spiral potatoes as others call it.

You might be wondering, a potato on a stick?
Well keep reading and you are going to understand how I made it and how easy it is.

It confuses meat eaters, they think it’s fish, they can’t believe a simple potato can be turned unto something like this.

The first day I made it for my family, Everybody liked it. I hope you will like it too.

The tricky part about this recipe is when cutting potatoes into spiral, but don’t worry it’s not too difficult, start by soaking your skewers in water for 2 hours (to avoid them burning in oven later). Then put it in through a potato and push it all the way through.  Use a sharp knife to make a series of angled slices in the potato turning it as you go. Then pull the spiral apart.

I have seasoned it with olive oil, lemon juice, paprika, cumin powder and some homemade breadcrumbs (The breadcrumbs gives it un incredible crispness)

I must admit, it is going to be a bit tricky with the first potato. But the first one should be enough for you to practice.

INGREDIENTS

5 Irish potatoes
5 skewers sticks, soaked
1/2 a cup of homemade breadcrumbs
1 tsp paprika
3 tbsp olive plus 2 tbsp fresh lemon juice.
1 tsb garlic powder
1 tsp cumin powder
1/2 tsp salt

PREPARATION

  1. In a medium bowl, combine olive oil, lemon juice and salt. Set aside.
  2. In another bowl combine, breadcrumbs, paprika, cumin powder, garlic powder and set aside.
  3. Insert the skewer into a potato and push the skewer all the way through it.
  4. Place the potatoes into a chopping board. Using a sharp knife start cutting the potato into spiral shape. Make sure you are cutting all the way into it until you can feel knife stopping on the skewer. 
  5. Gently loosen up potato into spiral shape. Brush all over the potato with olive oil mixture. 
  6. Place the skewed oiled potato on the breadcrumbs mixture in a medium bowl and spread the mixture all over the potato until it’s interely coated. Gently shake off the mixture excess.
  7. Place the potato on a baking sheet, and repeat the same with the rest of the potatoes.
  8. Bake in oven for 30 to 40 minutes in 200 Celsius, or more (depending on the size of your potatoes) turn them on the other side half way through.
  9. Remove the potatoes from oven, place them on a serving plate, and serve with your favourite topping.
