This crispy baked eggplant is delicious, simple, so easy to make. Another way to make your kids eat eggplant. My kids don’t like eggplant, but when I cook it this way, they all enjoy. Make this for your kids and you will see how they will enjoy.
INGREDIENTS
1 large eggplants
3 tbsp whole wheat flour plus 7 tbsp of water
1 cup of homemade breadcrumbs
1 tsp of turmeric
1 tsp of paprika
1/2 tsp of Salt
1 tsp of coriander powder
PREPARATION
- Wash the eggplant and cut into to thick rounds.
- Whisk together in a small bowl whole wheat flour, water, turmeric, coriander powder and salt, and set aside.
- In another bowl combine breadcrumbs, and paprika, mix very well.
- Dip the eggplant slices one by one into the flour mixture, letting the excess drip off. Then coat in breadcrumbs mixture.
- Place the eggplants slices in an oil baking sheet, bake for 10 to 15, or until golden brown on the outside.
