BAKED EGGPLANT

This crispy baked eggplant is delicious, simple, so easy to make. Another way to make your kids eat eggplant. My kids don’t like eggplant, but when I cook it this way, they all enjoy. Make this for your kids and you will see how they will enjoy.

INGREDIENTS

1 large eggplants
3 tbsp whole wheat flour plus 7 tbsp of water
1 cup of homemade breadcrumbs
1 tsp of turmeric
1 tsp of paprika
1/2 tsp of Salt
1 tsp of coriander powder

PREPARATION

  1. Wash the eggplant and cut into to thick rounds. 
  2. Whisk together in a small bowl whole wheat flour, water, turmeric, coriander powder and salt, and set aside.
  3. In another bowl combine breadcrumbs, and paprika, mix very well.
  4. Dip the eggplant slices one by one into the flour mixture, letting the excess drip off. Then coat in breadcrumbs mixture. 
  5. Place the eggplants slices in an oil baking sheet, bake for 10 to 15, or until golden brown on the outside.
