Scrambled Tofu and Brown Rice Vegetables

Hello friends, here’s another simple and delicious recipe. Scrambled tofu and brown rice vegetables. Yes I mean brown rice, I would love to advise you to choose brown rice over white rice. Please cook your rice separately, then mix with other ingredients. Avoid over cooking your vegetables, they loose their vitamins.

INGREDIENTS

3 cups of cooked brown rice
2 blocks of tofu, scrambled
1/2 cup of water
1 cup of broccoli florets
1 small carrot, thinly sliced
1/2 a cup of green beans,chopped
1 small red bell pepper, chopped
1 large onion, chopped
1/2 tsp of salt
2 tablespoons of oil
1/2 tsp of coriander powder
1/2 tsp of cumin powder
2 medium fresh tomatoes, chopped
1 tbsp of tomato paste
1/2 of paprika
1 /4 tsp of turmeric powder
2 bay leaves

In a pan over medium heat, add scrambled tofu, turmeric, salt and 5 tablespoons of water ( keep the remaining water).
Cook stirring frequently for about 5 minutes.

Remove from the pan and put aside.
In another pot, add the oil (do not heat oil), the remaining water, onion, fresh tomatoes, tomato paste, and all the vegetables. Cook for 5 minutes or until vegetables are tender but not very soft. (The less time you cook your vegetables the better you help them to keep their vitamins). Add the remaining salt, (you can add a little more salt if needed, but remember too much salt is not good), coriander, cumin, paprika, and bay leaves

Now stir in the cooked brown rice and scrambled tofu. Mix everything very well and remove from the heat.
Serve.
