Health on a Plate


I came up with this recipe as I went in my Kitchen last Friday. I didn’t know what to cook. But when I entered I just say to myself, let me make another omelet with just what I have.

I took some chickpea flour, some Irish potatoes, and some soya mince protein, then seasoning it. Guess what? This came out very delicious and everyone in my family enjoyed it.

So I taught of sharing it with you. You are going to like it.

Let get started.


1 and 1/2 cup chickpea flour
2 cups cubed potatoes (boiled)
1 cup soya mince
1 and 1/2 cup of water
1 tsp of Paprika
1 tsp cumin powder
1/2 tsp of black salt or sea salt
1 tsp turmeric powder
1 medium onion, diced
1/2 cup of chopped spring onions
1 small red and green bell pepper.


  1. In a bowl mix chickpea flour, salt, turmeric, paprika, cumin powder and water.
  2. Add spring onions, bell perpers, diced onion, potatoes and soya mince to the mixture and mix everything very well.
  3. Place the pan on over medium low heat, coat with oil and pour in half of the mixture, flatten top and cover with the lid and cook for 8 to 10 minutes.
  4. With a spatula or a spoon, realise the omelet from the pan.
  5. Using a wet plate, turn the pan upside down and slide the omelet back into the pan. Cook for another 8, to 10 minutes.
  6. For better results, let cool before slicing and Serving.
