Lentils and Potato Curry

Start your day with this delicious lentils and potato curry. Simple and delicious.

Ingredients

3cups of brown lentils, boiled
300g of potatoes, roughly chopped, boiled half way
1 large onion chopped
A small red pepper roughly chopped
4 gloves of garlic, minced1 tsp of paprika
1 tsp thyme
1/3 tsp turmeric powder
3 medium fresh tomatoes, diced
1/3 tsp of salt
2 cups water
1 tablespoon of oil
2 bay leaf

1 tsp of ginger paste
Salt to taste

Preparation

Add oil in the pan (do not heat oil) add onion, garlic, ginger, tomatoes, potatoes, bell pepper lentils and water. Cover and let it cook for 10 to 15 minutes stirring occasionally until the potatoes are soft.

Add the rest of the ingredients (herbs) mix and let it cook for 2 to 3 minutes. (Add more water if needed). Remove from fire and serve.

  1. Hi, my question is do you want to end up with 3 cups of lentils or do you start with 3 cups of dry lentils and boil them. Thanks in advance for the clarification.

    1. Hi, it’s wise to boil 3 cup of lentils, then measuring only 3 cups once it’s boiled. The rest you can keep in the refrigerator to use on another recipe.

  2. Hi, you mention ginger in the directions but there is no ginger in the ingredients, Also, you mention red peppers in the ingredients but you don’t mention that in the directions. Thanks in advance for your response.
