Homemade Vegan Veggies Pizza

It’s no secret that everyone loves pizza, my kids love pizza a lot, if it was up to them, we would eat pizza every day, they don’t actually enjoy ordered pizza, they say they love mommy’s pizza.

I remember on our 6th years anniversary my husband and I went out for lunch and ate pizza then we asked for the remaining to be packed so that we can bring it for kids. When we reached home my kids did not eat it. I asked them why they, they responded we like only the pizza that you make. My husband did not like it either, he just ate a little when we were at the restaurant and now I had to eat that pizza myself. That was the last pizza we ever ate outside home.

PIZZA DOUGH

2 cups whole wheat flour
1/2 tablespoon yeast
1/2 cup warm water or soy milk(use as needed).
2 tablespoons olive oil
1/4 to 1/2 TSP salt (use as needed)

PIZZA SAUCE

Olive oil (1 TBSP)
Garlic
Onions (1 medium)
Tomato paste (2 table spoons)
Fresh tomatoes (3 medium)
Coriander (1 tsp)
Thyme (or another aromatic herb)
Grated nutmeg (1/4 tsp)
Salt to taste

FOR TOPPING

1 medium onion
1 green pepper (sliced)
Grape tomatoes (cut into half)
fresh parsley
green olives (half a cup)
mushrooms (1 cup, cubed)
2 tablespoons olive oil
1 teaspoon of coriander powder
Grated nutmeg (optional)
Salt to taste.
Some fresh leaves of dandelion or moringa (for decoration I used Dandelion)

PREPARATION

  1. Prepare the pizza dough by mixing in a bowl flour, yeast and salt. Add olive oil, mix, then add warm water or soy milk stir well with a spoon or hand.
  2. Knead the dough very well until very soft and pliable for about 5 to 7 mins.
  3. Cover the bowl and let the dough rest for 1 hour, until the dough doubles in volume.

PREPARING SAUCE

Meanwhile for the sauce in a pan add oil,

garlic and the finely chopped onions, add tomato paste,

Fresh tomatoes, cut into pieces, coriander,

thyme, grated nutmeg, and salt to taste.

Cook for few minutes mixing well until the sauce thickens. Put aside to cool.

PREPARING THE TOPPING

In a bowl, mix the sliced ​​onion chopped garlic, green pepper sliced, grape tomatoes parsley, cubed ​mushrooms, coriander, thyme, grated nutmeg, salt, olives and oil. set aside.

Divide the dough unto two, Transfer the dough to the floured surface, gently Sharpe it to a ball and flatten it.

Dust a baking sheet with flour then put a pizza base on top and spread the pizza sauce as desired.  Sprinkle with all the ingredients prepared in the bowl.

Bake at 180 ° C for 30 or less minutes.

Decorate with dandelion or moringa leaves.

Slice and Serve Pizza warm.
