Easy Okra In Tomato Sauce

Hello friends, I welcome you today. And I want to present you my simple and easy way enjoy my okra. I hope you will love it.


INGREDIENTS

400 g of okra
3  fresh tomatoes
1 large onion
3 cloves of garlic
1 tbsp tomato paste
3 tablespoon of oil
Aromatic herbs (thyme, coriander, paprika, Rosemary or any herb of your choice)
1 tsp of  salt to taste

1 cup of water

2 bay leaves, optional

METHOD

  1. Wash and cut the okra into large strips. Wash and cut tomatoes and red pepper into pieces.
  2. Peel and chop onion and garlic.
  3. In a frying pan over medium flame, put oil, (do not heat oil) okra, onion, and garlic in a frying pan, cook for 5 minutes stirring with a spoon, then add sea salt,  and stir again.
  4. Cook for 3 minutes, stirring with a spoon again from time to time. (don’t cover the pan to avoid okra changing its green color)
  5. When the okra become tender remove from the fire and put on a plate.
  6. Add tomatoes and water in the pan and cook for 3 minutes or until tomatoes become tender, add the herbs and okra to the pan.
  7. Mix well with the sauce and cook for 2 minutes or until okra is hot, let it cool then serve.
