Hello friends, I welcome you today. And I want to present you my simple and easy way enjoy my okra. I hope you will love it.
INGREDIENTS
400 g of okra
3 fresh tomatoes
1 large onion
3 cloves of garlic
1 tbsp tomato paste
3 tablespoon of oil
Aromatic herbs (thyme, coriander, paprika, Rosemary or any herb of your choice)
1 tsp of salt to taste
1 cup of water
2 bay leaves, optional
METHOD
- Wash and cut the okra into large strips. Wash and cut tomatoes and red pepper into pieces.
- Peel and chop onion and garlic.
- In a frying pan over medium flame, put oil, (do not heat oil) okra, onion, and garlic in a frying pan, cook for 5 minutes stirring with a spoon, then add sea salt, and stir again.
- Cook for 3 minutes, stirring with a spoon again from time to time. (don’t cover the pan to avoid okra changing its green color)
- When the okra become tender remove from the fire and put on a plate.
- Add tomatoes and water in the pan and cook for 3 minutes or until tomatoes become tender, add the herbs and okra to the pan.
- Mix well with the sauce and cook for 2 minutes or until okra is hot, let it cool then serve.
