Homemade Vegan Sausages

Why homemade when you can buy everything from the store?  Well, the reason why I love this homemade sausage is that there are no preservatives or un-pronounced ingredients that are added and the best part is I can customize the recipe to my liking.

Many vegans or vegetarians always depend on buying all kinds of fries in the store. My husband always say the food that you can make yourself at home is the best, you know I think he is pretty right because when I make my own food at home I eat it with confidence because I know what I put inside, and I  know i cannot store it for more than  3 months.

Don’t be deceived you can make your own sausages at home, they are very easy to make and the ingredients are very easy to find. Here I have come up with easy ingredients and with some replacements ingredients that you can use in case you don’t have what I used and your sausages will taste just better. than the ones in the stores because you know you made it yourself. I have tried making my sausages with different ingredients.

Most people use aluminum paper to wrap the sausages, but I don’t, as you know aluminum is not good for health. But that cannot stop me from making my own sausages at home, so I used parchment paper to wrap my sausages and twist the end with the help of elastics rubbers and as you can see in the pictures it all came out right.

INGREDIENTS

2 cups boiled red beans. (or any beans)
1 cup soya mince soaked. (or mushrooms)
1 large onion, finely chopped
½ cup whole wheat flour, gluten flour chickpeas flour or even rice flour.
½ cup breadcrumbs (optional)
2 tbsp tomato paste.
1/3 cup nutritional yeast (optional)

Seasoning of your choice (cumin, fennel, coriander, celery, garlic powder, oregano, rosemary, thyme etc.

I used cumin, fennel, thyme and garlic powder.

 

METHOD

  1. In a large mixing bowl, mash up your beans with a fork, a potato masher or even a food processor.
  2. Once it’s done, add the other ingredients one by one but not flour and breadcrumbs. Mix well using your hands or food processor.
  3. Once that’s done add flour and breadcrumbs and mix again until you get a nice batter. (you might have to add a bit more flour and breadcrumbs if it’s too moist.)
  4. Divide the mixture into small pieces. With your oiled hands, roll the dough with your hands and place it onto a piece of parchment paper (not aluminum) roll it up and Sharpe the VEGAN SAUSAGES into sausages Sharpe and twist the ends with an elastic rubber.
  5. Place the sausages into a steaming basket and steam them for 30 minutes, may have to steam longer to firm up. Allow to cool for 10 minutes or more. The longer they cool, the easier they are to handle.

When ready unwrap, enjoy steamed, baked, shallow fried – as your heart desires. I baked mine.
