Seitan and butter beans stew

Enjoy this simple and delicious stew of Seitan and butter beans. Once you have your cooked Seitan (gluten) and boiled butter beans it will take you just few minutes to make this.

Seitan (gluten) is a protein find in wheat flour, it can be made from scratch using wheat flour or you can also buy the dry form of it which is called vital wheat gluten. Enjoy…

INGREDIENTS

1 cup of cubed Seitan, cooked
2 cups of butter beans, boiled
1 cup of tomato puree, you can just blend or grate fresh tomatoes
1/2 of salt
1 tablespoon of olive oil
1 tsp crushed coriander
1 tsp garlic powder
1 tbsp of paprika
1 large onion, finely chopped
Handful of coriander leaves
2 cups of water
1 tablespoon of potato starch mixed with 3 tablespoons of water. ( to thicken the stew) you can use any flour.

Preparation

In a medium pan over the heat, add oil (do not heat oil), add tomato puree, onion, butter beans and the rest of the ingredients except coriander leaves and the mixture of potato starch.

Stir and let it cook for 5 minutes, add the potato starch mixture stir and let it cook again for another 10 minutes or until the stew starts to thicken add chopped coriander leaves and stir again then remove from the heat and serve with anything your heart desires. I served mine brown rice, and red cabbage.
