CORNMEAL BREAD

INGREDIENTS

1½ cup cornmeal flour

½ tsp dry yeast

1 cup whole wheat flour

1 cup warm water/soy milk

½ cup honey or maple syrup

1 tsp black and white sesame seeds

½ tsp turmeric powder

METHOD

Make the dough by tipping the cornmeal flour, wheat flour, dry yeast, salt, and turmeric powder in a bowl and making a well in the middle.

Pour in the honey into the bowl, add water/soy milk little by little and use your fingers or wooden spoon to mix well until combined to a slightly wet, pillowy workable dough. Add more water/soy milk if necessary. Knead the dough for about 5 minutes until smooth.

Grease loaf pan with oil. Place the dough inside. Brush the top with soy milk or water and sprinkle the black and white sesame seeds. Cover with a clean clothe and place in the oven. Leave it to rise until doubled in size. Once the dough has doubled in size remove the clothe gently and turn on the oven at 220 degrees and bake for 45 minutes or until golden brown. Remove the bread from oven. Take it out of the pan and let it cool.
