Health on a Plate


Today I bring you this delicious chickpea curry recipe, enjoy.

Chickpeas are an excellent source of vegan and gluten free proteins and fiber. It also contain iron, vitamin B6, vitamin K, magnesium, zinc. It also contain a variety of health benefits.

1 cup of boiled chickpeas
1/2 green and red bell peppers
1 tbsp of crushed garlic
1 large red onion, chopped
1 tbsp spoon of oil
1 medium carrot, diced
3 medium fresh tomatoes
1 tbsp of tomato paste
1 tsp of paprika
1 tsp of thyme


In a pan over medium heat, add oil, (do not heat oil) add onion, garlic, bell peppers, fresh tomatoes and carrot immediately. Cook for 3 minutes stirring occasionally. Add tomato paste, and boiled chickpeas. Cook for 7 minutes, then add the herb, let it cook for another 2 or 3 minutes. You may add 3 to 4 tbsp of water, if needed. Remove from heat.

Serve over brown rice.
