3 vegan sausages cut into slices
2 cups of fresh broccoli florets
2 small sliced bell peppers
1 medium sliced white onion
3 tablespoons of water
1 tablespoon of oil
1/2 teaspoon of oregano
1/2 teaspoon of coriander powder
Salt to paste
Put a pan over medium heat, add oil and sliced vegan sausages.
Cook for 2 minutes and stir frequently until the sausages turn slightly brown ( Alternatively you can bake the sausages).
Now stir in bell peppers,broccoli ,water onion and the rest of the ingredients.
Stir frequently until the vegetables are tender but not too soft.( estimated 3 to 5 minutes) then remove from heat.
Serve with brown rice or brown bread and any green salad.
I served mine with brown rice cooked with onions ,coloured with turmeric and fenugreek sprouts.
I served leftovers the next day with an avocado toast, brown rice and sprouts
