Savoury oatmeal is very delicious, it has become our family favourite. We love it, it can be served as breakfast or dinner. I have made this dish in different places where I have conducted cooking classes and everyone has loved it. I know you are going to love it too.

2 cups oatmeal
4 cups of water or vegetable broth
( you can add more water if needed)
1 cup of boiled beans (red beans, white beans, chickpeas, kidney beans or any kind of beans)

1 cup of mushrooms
1 tsp paprika
1 tbsp nutritional yeast (optional )
1 large onion, chopped
1 tsp dried oregano
1 tbsp lemon juice
3 bell peppers ( red, yellow and green)
1 large carrot, diced
Handful of spinach or any green leafy vegetable. 1/2 tsp turmeric 1 tbsp olive oil Salt to taste

Preparation /Method
In a saucepan add water; bring to boil .Add oatmeal reduce heat to simmer. Cook for about 15 minutes.Add boiled beans and the rest of ingredients except spinach.Cook for another 10 to 15 minutes. Now add spinach and mix everything well. Remove from heat and serve. Enjoy.
