ROASTED SWEET POTATOES

To all sweet potato lovers, you are going to love this delicious delicious. This what I call art of home cookery.

4 sweet potatoes
1 tablespoon of olive oil
1 tablespoon of honey
1/4 tsp of salt
1/2 tsp of paprika, 1 tablespoon of fresh squeezed lemon juice.

Preparation

Boil the sweet potatoes half way. (10 to 15 minutes), depending on the size.

Alternatively, you can bake the potatoes in a 200 degrees oven on a baking sheet for 45 to 50 minutes.

Remove and allow to sit until cool enough to handle.
Slice the potatoes in half lengthwise.

Score the top halves (interior flesh) with a knife.

Brush the top of scored sweet potatoes with olive oil and season each top half with paprika and salt

Place potatoes on a baking sheet and bake for 20 mins at 230 degrees. (Depending on your oven)

Mix lemon juice with honey on a small bowl.
After 20 minutes remove the potatoes from oven and brush the top halves with the mixture of honey and lemon juice.

Return to oven and bake for another 10 minutes.

Once the sweet potatoes are tender, remove from oven, and give potatoes a final brush with honey mixture, and add seeds and chopped red bell pepper .

Serve with anything your heart desires.
