This cookies are perfect, and delicious. they come out soft, you eat them with confidence because you know what you put inside. Kids loves them. Give it a try and you will love it. I have tried it and my family loved it.
If you don’t like raisins, you can use dates, i have tried both and it was just perfect. I don’t put too much honey since my family don’t have sweet teeth. We don’t use sugar in my family, sugar is not good for health, it’s a sweet poison which many people do not realise.
You can use also mashed bananas as a sweetener in your bakings. It makes your cookies or bread come out soft and sweet. Sugar is addictive, that’s why many find it hard to give it up. But God gives us strength to overcome evil. Ask God in your prayers to help you discard sugar.
INGREDIENTS
1 cup whole wheat flour
½ cup raisins
1 and half cut oatmeal
3 tbsp of olive oil
½ cup coconut powder
3 tbsp of honey or maple syrup
1/3 tsp of salt
3 tbsp of mixed seeds (sunflower, sesame, pumpkin seeds), you use any seeds you have at hand
1 tsp cinnamon power
3 tbsp soy milk or water
1 tbsp of flaxseed meal or chia seeds, mixed with 3 or 4 tbsp of water. Handful of chopped nuts, you can use any nuts.(optional)
METHOD
1. preheat the oven to 350 degrees
2. In a bowl mix flour, yeast, cinnamon and salt. Then add oats, raisins, sesame seeds,
coconut powder, and nuts. Mix together until well combined. add the remaining ingredients.
The cookies dough batter will be very thick.
3. Drop the cookies dough by 3-inch balls onto a cookies sheet or baking sheet.
4. Use the bottom of a glass (you use your hands, to flatten the dough a bit)
This will produce more uniform cookies. You may need to dush the glass occasionally with some flour to
avoid sticking.
5. Bake for 20 to 30 minutes at 230 degrees Celsius or until golden on the edges.
Cookies will be slightly soft and chewy when they are done baking.
Store in a covered container. They can be stored for up to 7 days.
