This chickpea mayonnaise is very easy and delicious. I got this recipe from one of my Zimbabwean friend called Rutendo . She and l have something in common and that’s cooking.Whenever she tries something new, she always share it with me.This is one of the best recipe. I fell in love with it the very first time I prepared it. I love it because it is simple, easy to make ,does not require complicated and fancy ingredients.
Chickpea flour is used in many recipes which do not require eggs in the vegan world. Actually its far much better than eggs since it is rich in protein and doesn’t have cholesterol. When combined with water and heat, chickpea flour is a fantastic egg substitute.
Ingredients
1 cup of chickpea flour
3 cups of tap water
2 gloves of fresh garlic
3 tablespoons of olive oil or any other oil
1 tablespoon of onion powder
4 tablespoons of lemon juice
1/2 of coriander powder( optional)
1 teaspoon of honey or maple syrup
1/2 teaspoon of black salt( use any sauce)
Preparation
✔️In a small pot, combine chickpea flour and tap water. Mix well.
✔️Place on a high medium heat and stir until it thickens.
✔️Reduce the heat to medium low . Cover and let it cook for 10 to 15 minutes while stirring frequently.
NB: Don’t worry if the chickpea looks lumpy , it will be blended smooth.
After removing the mixture from heat ,let it cool down. It will be hard more like a boiled egg in consistency.
Place the chickpea into a blender, add oil and the rest of the ingredients.
Now blend until it’s smooth, stop to scrap down the sides of the blender along the way.
Transfer the mayonnaise to a jar and refrigerate.
