CAULIFLOWER AND GREEN BEANS STEW

Another easy and simple cauliflower recipe. I hope you will enjoy. This time I mixed it with green beans and it is very delicious.

INGREDIENTS

  • 2 cups cauliflower, florets
  • 1 cup green beans, tough ends trimmed and cut.
  • 1 small carrot, sliced
  • 1/3 cup of water
  • 1 cup tomato puree, homemade
  • 1 small green bell pepper, cubed
  • 1 tsp paprika
  • 1 tsp coriander powder
  • 2 tbsp of good oil.
  • Salt to taste

PREPARATION

In a pot over medium heat, put water followed by cauliflower and green beans. Steam for 5 minutes. Then add the rest of ingredients, stir well and let cook for 5 to 7 minutes, stirring occasionally.
Remove the stew from the stove and serve, with brown rice or anything you desire.

Note:

I always make my tomato puree at home, by just blending fresh tomatoes until pureed. But you can use fresh tomatoes and 1 or 2 tbsp of tomato paste.
