CASHEW VEGAN MAYONNAISE

In this homemade mayonnaise recipe you don’t need to add any oil because cashew nuts are full of fat but very good fat. It’s a very simple and delicious mayonnaise, better than store-bought , and healthier. You can use it in your burgers, sandwiches, salads or anything your heart desires.

INGREDIENTS

1 cup of raw soaked cashew nuts
2 tablespoons of fresh squeezed lemon juice
1 tsp onion powder
2 gloves of fresh garlic, or 1 tsp of garlic powder
1/3 tsp of black salt or sea salt
1/2 cup of water, may add less or more.

PREPARATION

Place raw cashew nuts in bowl and add water, soak for 2 hours. A quick way is to soak it with hot water for 30 minutes.

Drain the water when ready to use.

Place all ingredients in a blender and blend until smooth. Pour in a glass container and refrigerate for up to 7 days.
