Soya Vegan Bolognese

Soya Vegan  Bolognese  is a  sauce made  by substituting minced meat with soy mince (granules).

Ingredients

1 and half cup soya mince
1 cup of mushrooms, finely chopped
2 tablespoons of tomato paste
2 medium fresh tomatoes, blended or grated
1 tbsp of olive oil
2 cups of water
1 small carrot , grated
1 large onion, chopped
1 tablespoon of nutritional yeast, optional
1 bay leaf
1 tsp of paprika
1 tsp of garlic powder
1 tsp of ground coriander
1 small green pepper, diced

Preparation Method

Soak the soy mince in cold water for 15 minutes. Squeeze and put aside.

On a pan over medium heat, add oil(do not heat oil) , add onion tomato paste, fresh tomatoes, grated carrot, chopped mushrooms and soy mince. Cook stirring occasionally for about 5 minutes. Add water and the rest of ingredients. Mix very well and let it cook until the sauce thickens.

Remove from heat and serve with your whole wheat pasta. Enjoy
