ROASTED POTATOES

It has been said that, potatoes are the stomach’s best friend because of the sense of well- being that one experience after eating them.

Potatoes contain carbohydrates, good source of proteins, Minerals and fiber.

Potatoes can be prepared in different and healthy ways like boiling, roasting, steaming, and fried which is the most unhealthiest way of preparing potatoes.
They can also be mashed.

Why fried potatoes are not good for health,

When potatoes are fried, they loose water through evaporation, and gain oil. 15% to 20% of their weight is made up of fat. This makes it unhealthy, too much fat in a diet is not good.

So instead of frying your potatoes, or buying potatoes chips which is highly fried in hot oil, you can roast them and enjoy it.

Raw potatoe juice neutralizes stomach acid, because it’s rich in alkaline substances.

Ingredients

ROASTED POTATOES

2 large Irish potatoes
1 tbsp of olive oil
1/3 tsp of paprika
1/2 tsp of coriander powder
1/2 tsp of dry oregano
1/4 tsp of turmeric
1/3 tsp of salt
1 tbsp of lemon juice

Preparation

Preheat the oven to 200 degrees.

Wash the potatoes, and slice them.
Place potatoes in a mixing bowl then add the rest of the ingredients, mix well until potatoes are well coated with the spices.

Place the potatoes on a baking sheet and roast for 40 minutes or until potatoes are brown and crisp on the outside.

Take out of oven and serve with any sauce you want. I served mine with homemade ketchup ( get the recipe on the link below) and homemade vegan mayonnaise which I coloured with turmeric powder( just my own creativity).
