This baked tofu crumbles are super easy to make. Very delicious and takes you less than 20 minutes to make. Adding the baked tofu crumbles to the sauce makes it taste so good. But you can also serve it as it is.
2 blocks of tofu
1 tablespoon lemon juice
1/2 a tsp paprika
1/2 a tsp garlic powder
1/2 a tsp coriander powder
1/3 a tsp of salt
For the tomato sauce
1 tablespoons of tomato paste
2 medium fresh tomatoes, chopped
1 medium red onion, diced
1 cup of water
3 cloves of fresh garlic
1 tsp of corn starch
1/2 a tsp of paprika
1/2 of salt
1/2 a tsp of fennel seeds
Crumbles the tofu with your fingers and place in a bowl, add garlic powder, paprika, salt, lemon juice and coriander powder. Mix everything together well and place in an oiled baking sheet. Bake for 15 minutes.
Meanwhile make the tomato sauce.
In a medium saucepan over medium heat, add oil ( do not heat oil), onion, garlic, tomato paste, fresh tomatoes, cook for 2 to 3 minutes.
Now mix the corn starch with the water and add to the pan, and all the remaining ingredients. Stir everything very well and cook until the sauce thickens.
Once tofu is done, remove from oven and add to the sauce. Stir well and serve with anything your heart desires.
I served mine with brown rice, asparagus, and sweet corn.
