MEATLESS VEGGIE ROLL

Hello friends, today I bring another easy and simple recipe, also gluten free and oil free. And yes of course very healthy. Many of you have requested it. My family and I enjoyed it. I hope you will love it too. You know I always try to bring you something simple and easy, something that you will make yourself at home and say, wow it was so easy!
The ingredients are cheap and available everywhere. If you don’t have the flour that I have used, you can use any flour you have. Also if you can’t find unrefined soya mince or chunks, you can use mushrooms, or oatmeal. Just be creative in your kitchen. This time around, I am trying to create some recipes using this soya product.

INGREDIENTS

  • 1 cup of soya mince, grinded
  • 1 cup of white beans, boiled and mashed
  • 1 cup of rice flour, you can use any flour you have
  • 1 medium beetroot, boiled
  • 3 tbsp of tomato paste
  • 2 tbsp of corn or potato starch
  • 1 tsp of onion powder
  • 2 tbsp of nutritional yeast, optional.
  • 1tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of paprika
  • 1 tsp of rosemary powder
  • 1 tsp of thyme
  • ½ tsp of salt

PREPARATION

  • Cut beetroot in small pieces, place in the blender with very little water and blend until smooth. If you have no blender, you can grate your beetroot by using a grater.
  • In a medium mixing bowl, combine all the ingredients together except flour and corn or potato starch. Mix everything very well, then add flour and corn or potato starch mix again until you get a nice dough, (not too hard, not too moist). You can add some flour if it is too most, or add little water if it is too hard. (just like the tofu sausages dough we did last week.)
  • Cut a piece of parchment paper (not aluminum foil. Aluminum is not good for our health, it is better to avoid it in our kitchens), big enough to roll in your dough. Shape the dough with your hand first and place in a piece of parchment paper, roll it in gently and twist the ends.
  • Steam for 45 minutes in high heat. (use any steamer you have).
  • Let it cool before slicing. You can bake the slices if you want it crispier.
  • Serve with your burger bun, tomatoes and any topping of your choice. That’s it. You are going to love it. God bless you. Enjoy the wonderfulness of plants-based foods.

TOFU SAUSAGES

These tofu saussages are very deliciousand easy to make. You are going to love this recipe. No complicated or expensive ingredients.

Tofu is very delicious and concentrated in proteins. It is one of the best source of vegan proteins. Making it at home is very interesting.

INGREDIENTS

1 block of firm tofu
1 cup of grounded soya mince, or dry mushroom powder
1 small onion
½ cup of rice flour
½ cup of water or homemade vegetable broth
1 tbsp of grind flaxseeds + 3 tbsp of water
2 tbsp of tomato paste
1 small red bell pepper
1 tbsp onion powder
1 tsp paprika
Salt to taste

PREPARATION METHOD

First combine 1 table spoon of flaxseed and 3 table spoons of water. Mix and let sit for 15 minutes.

Break tofu into small pieces with your hands and place in a blender. Add all other ingredients, except rice flour and soya mince or mushroom powder, if you are not using soya mince. (Alternatively, if you don’t have a blender, mash tofu, grate onion and red bell pepper in a bowl. or just use the powder ingredients and leave out onion and bell pepper.) Add the other ingredients and mix well. Add flour.

Fill a large pot with water, place the steaming basket on top and bring it to boil.
Divide the mixture into 9 equal balls. Roll each tofu saussages in a parchment paper twist the ends so that saussages can be completely covered. Place the tofu sausages into a steaming basket and let them steam for 40 to 45 minutes.

Let them cool before removing the parchment paper. Bake or shallow fry.

NOTE:

If you don’t have soya mince, use soya chunks.
You can also bake this tofu sausages.
If you don’t have a grinder to grind the mince or chunks, you can use a pounder to pound it until you have a powder.

SOYA MINCE AND GREEN BEANS STEW

Today, I bring you this simple and delicious soya mince and green beans stew recipe. I hope you will enjoy.

INGREDIENTS

1 cup of green beans, washed and cut into small pieces
2 cups soya mince, soaked and squeezed
1 cup tomato puree (blend or grate about 3 large tomatoes to get this tomato puree)
1 large onion, diced
1 small red bell pepper, diced
1 small yellow bell pepper, diced
1 cup of water
2 tbsp oil, any good oil you can afford
1 tsp paprika
1 tsp thyme
1 tsp fennel seeds
½ salt

PREPARATION

In a frying pan, add green beans, oil and half cup of water, sauté for 3 minutes, add diced onion and bell pepper, and sauté, for 2 minutes. Stir in the tomato puree, soaked soya mince, and water. Cook for 5 minutes. Now add the spices; paprika, thyme, fennel seeds and salt. Stir and remove from the stove. Serve with anything your heart desire.

LENTIL PATTIES

Lentils Patties, a very simple and delicious recipe.

INGREDIENTS

  • 2 cups cooked lentils, mashed
  • 1 onion finely chopped
  • ½ cup cooked potato, mashed
  • 1 tsp garlic powder
  • 2 tbsp cornstach
  • 1 small carrot, grated
  • 1 small red bell perper,  chopped
  • 1 tsp coriander powder
  • ½ cup finely chopped spring onion
  • 1 cup of chopped celery
  • Salt to taste

PREPARATION

In a mixing bowl, mix all ingredients together very well. Form into patties and place  into a baking sheet . Bake at 250 degrees C for 30 minutes. Flip over after 15 minutes.

EGGPLANT AND POTATO STEW

This is Eggplant and potato stew is very delicious and easy to make. It doesn’t require much time in the kitchen. For people with busy schedules. This recipe is just for you. It takes less than 15 minutes to prepare it, as long as you have your boiled potatoes ready.

INGREDIENTS 

  • 1 medium eggplant
  • 2 medium potatoes
  • 1 large onion, cubed
  • 1 small green bell pepper, cubed
  • 1 small red bell pepper, cubed
  • 1 cup tomato puree. You can blend fresh tomatoes, or grate them to get tomato puree.
  • 1 tsp of paprika
  • Salt to taste
  • 2 table spoon oil. Any good oil you can afford
  • 1 tsp of rosemary powder

PREPARATION

  • Wash and cut the potatoes into stripes and boil them half way.
  • Remove from the pot and set aside.
  • Wash and cut eggplant into strips.
  • In a pan over medium heat, sauté eggplant with little water and 2 table spoons of oil. (use any good oil that you can afford but not vegetable oil) for 3 minutes, stirring occasionally.
  • Add onion, bell peppers and salt, cook for 2 minutes.
  • Now add tomato puree and half cooked potatoes, stir and let it cook for 5 minutes or until eggplant and potatoes are soft but not too soft.
  • Add paprika and rosemary, mix again.
  • Take off from the stove and serve with anything your heart desires.

SAVOURY PUMKIN

I love coming up with easy and simple recipes. I personally don’t like complicated recipes, with fancy ingredients.

This delicious savoury pamkin is so easy and simple to make. No fancy ingredients. I hope you enjoy. It is one of my favourite recipe. Easy and simple and very delicious.

INGREDIENTS

2 cups of boiled large cubed pumpkin
1 cup of green beans
1 cup of chopped cabbage, you can use any vegetable you have, like broccoli or cauliflower
1 cup tomato puree (you can blend your own fresh tomatoes, or you can grate them)
1 tsp turmeric powder
1 tsp coriander seeds or powder
1 tsp paprika
3 tbsp olive oil

PREPARATION

In a large pan over medium heat, add oil and all other ingredients except pumpkins and spices.
Cook for 5 minutes, add the pumpkin mix and cook again for 3 minutes. After that add the spices, stir and remove from stove. Serve with rice.

PEANUT BUTTER LOAF

This peanut butter Loaf is taken from the book Vegetarian Cooking, a book that was compiled by one of my sister in Christ Wendy Eaton from Canada. It’s a book that has inspired me a lot. This loaf is very delicious and easy to make.

INGREDIENTS

1 cup peanut butter
½ cup water, or soymilk. You can also use any plant-based milk.
2 cups brown rice, cooked
1 small onion, chopped
½ cumin powder, or any herbs you have.
½ cup of tomato soup
Salt to taste.

PREPARATION

  • Cream peanut butter with water or milk, until smooth.
  • Add rice and other ingredients. Mix everything well.
  • Pour into greased bread loaf.
  • Bake at 350 for 30 minutes (covered).
  • Take out of oven, pour soup over as a sauce. Serve.

HOMEMADE HAIR FOOD FOR AFRICAN HAIR

There are people who believe that African hair cannot grow without plaiting it, and that there is nothing to use in other to keep it beautiful, soft and easy to comb. Therefore, one must cut it.

But I disagree. I believe that God who created the African woman, gave her beautiful hair that serves both for her natural covering and adornment and He has also provided what the African woman can use to take real good care of her hair. There is nothing impossible before God. When we believe it is impossible for our hair to grow, we limit ourselves. But if we humble ourselves and ask God for wisdom, he will help us discover things we do not know.
I have been praying and searching for natural oils which can help take good care of my hair, and the Lord has revealed this to me, and I can humbly say that God has provided everything we need.

God has created us all different in everything, even when it comes to our hair, God gave us different kind of hair. Some has it soft, some has it hard and struggle to comb. Some has is long and easy to comb. But as of breaking, all hair breaks, depending on the weather and what you apply. Some put strong harmful chemicals which makes their hair to break even more and damage the scalp of the hair. But if you apply healthful oils which are natural and has no chemicals, your hair will grow healthier and beautiful. The bible says that the glory of a woman is her hair, and God has given it to her as a natural cover.
After many years of researches and experiments I did on how to keep hair natural, I came to realize that God has provided natural oils for our hair in every country.

To have your hair soft and easy to comb, that is a wish and desire of every Christian woman. And to make your life easy I have come up with different natural oils. After I used these oils and experienced their wonderfulness myself, on my hair and my daughter’s hair, I praised God in my heart to say God you really did provide for us what we needed.

The word of God in 1 Peter 3:3 and 1 Timothy 2:9 forbid us to plait our hair. Some believe that African hair can only be maintained and grow by plaiting but this is not true. Plaiting hair actually increases the risk of boldness and loss of hair. There are also other who go to the other extreme of cutting their hair and cover it. But short or cut hair is man’s hairstyle. It is the same as wearing trousers which is an abomination before God. (1 Corinthians 11:14-15, Deuteronomy 22:5.)

There are also other who put artificially hair in order to keep their hair. But this together with covering of the hair causes the hair to fall and enhance the animal passions as stated in the Spirit of Prophecy in the following quote: “The artificial hair and pads covering the base of the brain heat and excite the spinal nerves centering in the brain. The head should ever be kept cool. The heat caused by these artificial coverings induces the blood to the brain. The action of the blood upon the lower or animal organs of the brain, causes unnatural activity, tends to recklessness in morals, and the mind and heart are in danger of being corrupted.” – The Health Reformer, October 1, 1871. – Healthful Living, p. 185.1

My dear sisters, today I have good news for you. You can let your hair grow as long as possible and take good care of it without going to any extremes. God has provided a solution for your hair. He made you beautiful. He gave you beautiful hair and provided all you need to take good care of it. Because He is a lover of natural beauty.

This homemade hair food is easy and simple. All oils used are good for hair and body, and they are healthy. People spend lots of money to buy hair food, which doesn’t give satisfying results. But I found this way simple, easy, healthy and cheap for me. I have shared this recipe with many different people and they have all come back with positive results. I hope it will be of good help to you too. Don’t expect the results too soon, ask God to help you and take one day at the time.

LET ME TELL YOU ABOUT THESE OILS

COCONUT OIL makes hair soft and easy to comb. It acts like a natural relaxer.

CASTOR OIL also makes the hair soft, thick, shiny and easy to comb. It is also good for the skin and for health, it works as a colon cleanser (when swallowed).

SHEA BUTTER does the same work as coconut oil, it does magic on the hair. Once you apply it on your hair it makes your hair so soft, shiny and easy to comb. (I guess this is what all ladies out there want)
Shea butter is good to use as lips balm, it last long and keep your lips moisturized. It has vitamin A and E. It nourishes the skin and makes it tender. Shea butter is good for babies too, for skin and hair and it’s non-toxic. Good to apply on stretch marks. It gives relieve to nasal congestion, also relieve sinus congestion. It removes the dandruff. My husband used to have trouble with dandruff, until we find out about shea butter. And when he applied on his hair, the dandruff disappeared up to date he has no trouble. It is best to choose the natural product over the refined ones although it may not look very appealing and may have some tiny bits of the seeds. But it is as natural as you can get. If the characteristic smell doesn’t appeal to you, bleached and de-scented butter may serve your cosmetic purposes. But such chemically extracted and refined products may not offer all of the health benefits Shea butter is known for.

OLIVE OIL is very good for hair. In cooking it is one of the best. When my kids were babies, I always use olive oil for their skin. When my daughter was born, she had such nice and beautiful hair, her father advised me to be massaging her hair with olive oil. And that is what I did until I find out about coconut oil, castor oil and shea butter. Up to now she still has beautiful hair. And I never cut her hair since she was born.
The best things about this recipe is that you can apply it on your hair, prepare it the way you want and go out wherever and whenever you want to go. You can also apply on your skin.
Here is some other option of natural oils. In case you don’t have what, I have used: rosemary oil, garlic oil, neem oil, avocado oil. If you at least have 3 of these oils, it is ok. If also you don’t have shea butter it is ok, just use what you have.

Sometimes I add neem powder or rosemary powder to the hair food mixture. But this time I did not have it with me. (just 1 tsp or ½ tsp, depending on how much your mixture is)

INGREDIENTS

30 ml of olive oil
30 ml of unrefined coconut oil.
30 of castor oil
200 grams of unrefined raw Shea butter

PREPARATION METHOD

Melt the Shea butter by putting it in a small glass bowl then place the bowl in a pot of hot water.

Leave it until shea butter is melted (don not allow to cook or be too hot as this will destroy the necessary vitamins that will nourish your hair). Once shea butter has melted add other oils, mix well and pour immediately on a container. Place it in the fridge until thickens. Then take it out and store it in a cool place. Use as your everyday hair food.

In case you cannot find Shea butter where you are, you can mix equal part of olive oil, castor oil and coconut oil (or one of the options I gave above). These oils can be found anywhere in the world and they can be applied on the hair with good result too.

Note: You can use the same as ointment for your skin and as a lip-balm for your lips.

VEGETABLE BURGER

Hello everyone, today we are making delicious vegetables burgers. Very delicious and easy.

Anything that you can make yourself at home is the best. Making your own burgers at home will spare you and your family from consuming MSG which can be hidden in many different names.

INGREDIENTS

  • 1 medium onion, finely chopped
  • 1 medium boiled  potato, mashed
  • ½ cup of walnut, pecans. (almond, or cashew nuts),  finely chopped
  • 1 cup of cooked oatmeal
  • 1 cup of homemade breadcrumbs
  • 1/2 tsp of salt
  • 1 tsp garlic powder
  • 1 tsp of thyme
  • 1 tsp of black molasses, optional

PREPARATION METHOD

In a bowl,  mix all ingredients together very well.  The mixture should hold together to form patties, but should not stick to hands. If too wet add breadcrumbs.

Shape unto patties and place into a baking sheet. Bake at 250 degree C, for 40min. or until done. (flip over half way through).

Serve in your burgers buns with your favourite toppings. Enjoy

GLUTEN SAUSAGES

INGREDIENTS

  • 6 cups flour
  • 2 cups water

For the broth

  • 4 cups water or homemade vegetable broth.
  • 1 large carrot, chopped
  • 2 medium onions,  diced
  • 1 head of garlic or 1 tbsp garlic powder.
  • 2 tbsp beetroot paste
  • 2 tbsp tomato paste.
  • 1 tbsp paprika
  • 1 tsp thyme
  • Salt

PREPARATION

  1. Combine flour and water, form a hard dough. Check my gluten recipe for more details.
  2. Place the dough in a large bowl and let sit for a couple of hours. 
  3. Place the bowl with the dough in the kitchen sink and wash under running water until the water in the bowl is clear. (This process takes some time, so be patient) 
  4. Once that’s done,  you will now have your gluten. Take a sharp knife cut the gluten unto 6 pieces. Place the gluten pieces in clear water and let them sit for 10 minutes.
  5. Take a clean cotton cloth,  cut six pieces from it, big enough to roll a sausage.
  6. Take each piece of gluten, roll it with your hands, giving it the shape of a sausage. Place on the piece of cloth and roll it. Close the ends with a piece of string. Do the same with the remaining gluten pieces.   
  7. In a large pot, add 4 cups of water or homemade vegetable broth, then add all the ingredients.  Once it start boiling, place the gluten sausages in the pot and cover. Let them cook for 45 minutes.

 

After that, remove the sausages. Unwrap and bake or shallow fry with very little oil.
